Cooking with Veggies (aka Steak and Veg)

We’re a month into the new year and a week into the new semester, so I figured it’s a good time to check in on my mini-resolutions. So far so good.

I resolved to cook more with vegetables. That’s been going pretty well. I’ve even been taking photos of some of my more amusing meals. I’ll share one here and, hopefully, another couple in a day or two (hint: I got a whole butternut squash and this only used about a quarter of it). Yum!

In any case, this was a lovely, grass-fed sirloin that I served on a bed of brown rice. On the side is: cracked cherry tomatoes, caramelized butternut squash with roasted butternut squash seeds, and steamed broccoli with red pepper oil. It was delicious! (Although I’d add a red wine reduction sauce over the steak and rice, if I had to do it again.)
