Coconut Macaroons

When I brought the Coconut Cashew & White Chocolate Cookies in to class, I also made a quick batch of white chocolate coconut macaroons because one of my classmates has celiac. I’m not sure she liked them–I got in the habit of keeping them rather under-sweetened because my cousin who is celiac is diabetic as well–but I liked the leftovers (and one of my other classmates ‘stole’ a few and she loved them) so I’m not too worried!

Triple Chocolate Oatmeal Cookies: Recipe (and TBT)

Oh dear, I’m off from classes (I’ve got a lovely, long winter break) and so have completely lost track of the days of the week! So today for my belated Throwback Thursday–shall we call it Throwback Friday?–I’m giving you a treat.

A simple recipe for triple chocolate oatmeal cookies! It’s winter and we are headed back to work and school after the holiday (some people much later than others); don’t you want to curl up inside with a cup of cocoa and a cookie? Halloween Cookies

Halloween is a great excuse to bake!

I decided I had to make something with candy corn–don’t ask me why, I have no good reason. After some googling, I discovered that people really like candy corn with salted peanuts and/or peanut butter. So I modified a Martha Stewart for chunky peanut butter cookies (I got rid of the chunks and added more peanut butter). When I flattened them, instead of using a fork, I used a candy corn. Strawberry Rhubarb Crumb Bar Recipe

A local farmer’s market near me had rhubarb. I don’t generally do much with rhubarb. I like it, but it’s not my favorite thing to bake with. Still, these stalks were a beautiful deep red and I couldn’t help getting a dozen stalks of this sweet vegetable. (Don’t forget, you can only eat the stalks, the leaves are poisonous).

TARDIS Cake with Jammie Dodgers

Hi everyone. I’m Mercedes and I’m a nerd. I love “Doctor Who” (not that a love of a long-running, British, sci-fi show is nerdy in and of itself, but in my case it is evidence of my nerdy-ness). As you can imagine, I was very excited about the 50th anniversary episode of Doctor Who that aired, well, quite a while ago now. In celebration of the landmark episode I baked. A lot. I did share this on my old blog when it actually happened, but I’m so proud of this cake that I’m posting it here as well.
