Coconut Macaroons

When I brought the Coconut Cashew & White Chocolate Cookies in to class, I also made a quick batch of white chocolate coconut macaroons because one of my classmates has celiac. I’m not sure she liked them–I got in the habit of keeping them rather under-sweetened because my cousin who is celiac is diabetic as well–but I liked the leftovers (and one of my other classmates ‘stole’ a few and she loved them) so I’m not too worried!

White Chocolate and Coconut Cashew Cookies

Have you ever had the coconut cashews from Trader Joes? If you haven’t, you really must try them! They’re great by the handful or with a cheese platter. And as it turns out, they’re great in cookies.

Triple Chocolate Oatmeal Cookies: Recipe (and TBT)

Oh dear, I’m off from classes (I’ve got a lovely, long winter break) and so have completely lost track of the days of the week! So today for my belated Throwback Thursday–shall we call it Throwback Friday?–I’m giving you a treat.

A simple recipe for triple chocolate oatmeal cookies! It’s winter and we are headed back to work and school after the holiday (some people much later than others); don’t you want to curl up inside with a cup of cocoa and a cookie? Well this can get you there pretty darn fast, no electric mixer involved. Continue reading “Triple Chocolate Oatmeal Cookies: Recipe (and TBT)”

Halloween Cookies

Halloween is a great excuse to bake!

I decided I had to make something with candy corn–don’t ask me why, I have no good reason. After some googling, I discovered that people really like candy corn with salted peanuts and/or peanut butter. So I modified a Martha Stewart for chunky peanut butter cookies (I got rid of the chunks and added more peanut butter). When I flattened them, instead of using a fork, I used a candy corn. Strawberry Rhubarb Crumb Bar Recipe

A local farmer’s market near me had rhubarb. I don’t generally do much with rhubarb. I like it, but it’s not my favorite thing to bake with. Still, these stalks were a beautiful deep red and I couldn’t help getting a dozen stalks of this sweet vegetable. (Don’t forget, you can only eat the stalks, the leaves are poisonous).

Obviously strawberries and rhubarb are a classic pairing. I didn’t want to make pie. I like pie, but I don’t love it. Continue reading “Strawberry Rhubarb Crumb Bar Recipe”

TARDIS Cake with Jammie Dodgers

Hi everyone. I’m Mercedes and I’m a nerd. I love “Doctor Who” (not that a love of a long-running, British, sci-fi show is nerdy in and of itself, but in my case it is evidence of my nerdy-ness). As you can imagine, I was very excited about the 50th anniversary episode of Doctor Who that aired, well, quite a while ago now. In celebration of the landmark episode I baked. A lot. I did share this on my old blog when it actually happened, but I’m so proud of this cake that I’m posting it here as well.

More Food Photography Practice

Since I got my camera, I haven’t been baking quite as much as normal. That’s not to say I haven’t been baking. In fact, I entered a NY State Maple Syrup baking contest and won two third place ribbons!

I’ve been remiss with my photography, as you can probably tell from this iPhone photo of my award winning maple bacon cornbread and my maple pecan sandwich cookies. Continue reading “More Food Photography Practice”
